Property Developers Paralimni Cyprus

Nebraska Obwohl ich Bruce Springsteen für seine Errungenschaften im Rock/Pop-Bereich eigentlich mehr schätze als für seine – mal melancholischen, mal beschwingten – Balladen (sämtliche Kritiker scheinen da eher umgekehrter Meinung zu sein), muss ich eingestehen, dass das schlicht produzierte “Nebraska” ein echtes Goldstück ist, das – wenn man dafür in Stimmung ist – seinem guten Ruf absolut gerecht wird.

Irgendwie erinnert mich Springsteens Gesang auf dieser Scheibe unwillkürlich immer wieder an einen sanfteren Bob Dylan. Freilich kann der Boss texttechnisch nicht ganz mit dem großen BOB mithalten, aber seine sanfte Stimme, die – begleitet von lässigem Gitarrenspiel und harmonischen Harmonikaeinlagen – auf äußerst willkommene Weise unsere Ohren “heimsucht”, ist einfach nicht “schlechtmachbar”. Man kann es unmöglich nicht mögen!

Wenn man Herrn Springsteens “ruhigere” Alben – also z.B. “Tunnel of Love”, “The Ghost of Tom Joad”, “Devils and Dust” und eben dieses hier – auf einmal betrachtet, dann geht “Nebraska” – meiner Meinung nach – relativ eindeutig als Sieger hervor.

Fazit: Nach seinem endgültigen Durchbruch mit dem Vorgängeralbum “The River”, besann sich Mr. Springsteen auf das, was er wirklich machen wollte (zumindest zu dieser Zeit) und machte es ganz einfach – ganz ohne E-Street-Band und aufwändigen Studioschnickschnack. Nun ja, er konnte es sich ja auch leisten – und letztlich sollte er ja auch recht behalten!

HEUTE sind wir ihm dafür dankbar.

Kurzum: Ein chilliger, kurzweiliger Zwischenstopp an allen möglichen Orten auf diesem Planeten und in unserm (bzw. Springsteens) Inneren, zwischen den beiden (für die Karriere) sehr, sehr wichtigen “The River” und “Born in the U.S.A.”.

Alles andere als 5 STERNE wären an dieser Stelle höchst unangebracht. : NEBRASKA Springsteens Entscheidung, unmittelbar nach dem kommerziellen Durchbruch mit The River dieses unbehagliche Nebraska herauszugeben, das manchmal an ein Demoband erinnert, kommt einem geradezu pervers vor. Aber das Wesen dieses Albums ist unverkennbar — mit nur einer akustischen Gitarre und den langgezogenen Tönen seiner Harmonika im Hintergrund erzählt Springsteen Geschichten von Typen, die sich diesseits und jenseits des Gesetzes bewegen, einige allerdings auch genau auf der Linie dazwischen. Hieraus entsteht eine beeindruckende Serie von Schwarz-Weiß Photographien — die Details haben jeweils für sich betrachtet eine düstere Wirkung, aber sie wirken auf die Phantasie so zündend, wie es Farbphotos niemals geschafft hätten. “Mansion on the Hill”, “Highway Patrolman”, “Atlantic City” und das erschreckende “Nebraska” werden am eindringlichsten vorgetragen und gehören zu den Werken aus Springsteens Lebenswerk, die man so schnell nicht vergessen wird. –Daniel Durchholz Nebraska

Sitting in a bar in with my buddies in Lima, Peru watching the world woman’s Boxing Championship bout for defense of the World Title Superfeather, between Kina Malpartida, of Peru (called the Champion of the Poor) and Halana Dos Santos of Brazil … …and

“I never saw a female boxer fight so hard to the styles of a man before, and with near the same strength, clean and swift and as beautiful as Mohammad Ali. There never was a woman like that. She moved just like a bull and tiger both in one, like Rocky Marciano, she was a little nervous at first though.” Lee told his drinking buddy, Enrique.

“Do you know her?” one of the men asked sitting next to Enrique, in the bar.

“Did I know her? I know about her like you know about nobody in the world and I love boxing like you love the God of Wine (the man was drinking a glass of Trapiche, Malbec, 2008, red wine, from Argentina.) She is the greatest, finest, Peruvian, most stunning woman boxer that ever lived, and Halana couldn’t put her down like a dog, as she thought she might.”

“Did you go down and see the fight?” asked the stranger.

“No. I was right here, it just ended. She’s the only female boxer worth her salt.”

Lee tried to be respectful to the bald headed wino, who said all this in a high melodramatic way, but Enrique was starting to shake his head as the stranger leaned over by him.

“You should have married her,” said the wino.

“It wouldn’t have hurt her career,” said Lee, to the bald headed wino, “but I’m already married.”

“Well I guess that’s a drawback, a husband isn’t what she really needs anyhow,” said the stranger.

“Gosh, what a fighter she was,” repeated Lee.

“That is a fine way to look at it,” commented Enrique, his brother-in-law, “Didn’t Kina knock her out, it happened so fast I didn’t get to see the end result?”

“A technical knockout is what they call it,” said Lee, “she was in the corner, and it was curtains, had they not stopped the fight.”

“It was a trick,” said the wino, “the Peruvian took Halana by surprise.”

“Kina knocked her down,” said Lee.

“She turned to smile at me, and that got the Peruvian the knockout!” remarked the wino.

“I thought you said you weren’t at the fight?” said Lee.

“No, you said you were not at the fight, I went out just for the fight.”

“It was a great fight,” remarked Enrique, then whispered to Lee, “I hope to god this creep leaves.”

“How can you say that?” said the wino to Lee and Enrique.

“I say it because it’s true,” Enrique said. “I’m the only one here sitting next to you, leave us in peace.”

“What did he say?” said the wino to Lee.

“He said you’re a drunken wino, and he knows Kina and she’s going to come here after the fight and knock the shit out of you for bothering her brother-in-law.”

“It’s a lie,” the wino said.

“It’s true,” Enrique said, “That’s truly what he said.”

“It’s a lie,” the wino said proudly.

And just then, some woman next to the wino hauled off and hit the wino, and he fell on the floor, and she said, “And it doesn’t make any difference to me whether you believe it or not, I’m the sister-in-law of Kina,” and the drunk just smiled as he looked up at her, and said, “It could be possible.”

Kina Malpartida, de Perú (llamada la Campeona de los Pobres)

y Halana Dos Santos de Brasil…

“Nunca antes vi a una boxeadora pelear tan duro al estilo de un hombre, casi con la misma fortaleza, limpio, rápido y tan lindo como Muhamad Ali. Nunca hubo una mujer así, ella se movía como un toro y un tigre juntos, como Rocky Marciano; aunque ella estaba un poco nerviosa al comienzo”. Lee le dijo a Enrique con quien estaba bebiendo.

“¿La conoces?” Preguntó uno de los hombres que estaba sentado en el bar junto a Enrique.

“¿Si la conozco? Sé acerca de ella tanto como tú sabes acerca de nadie en el mundo y me gusta el boxeo como a ti te gusta el dios del vino (el hombre estaba bebiendo un vaso de vino tinto Trapiche de Argentina). Ella es la más grande, la mejor, peruana, la más sensacional boxeadora que alguna vez ha existido, y Halana no la pudo derrotar como ella pensó lo haría”.

“¿Fuiste al coliseo para verla pelear?” preguntó el extraño.

“No. Estuve sólo acá, justo acaba de terminar. Ella es la única boxeadora que vale”.

Lee trataba de ser respetuoso con el alcohólico hombre calvo, que hablaba en una alta forma melodramática, pero Enrique estaba empezando a mover su cabeza mientras que el extraño se recostaba en él.

“Tú deberías haberte casado con ella” dijo el alcohólico.

“No hubiera hecho daño a su carrera”, dijo Lee al alcohólico, “pero ya estoy casado”.

“Bien, pienso que esto es un inconveniente, un esposo no es lo que ella realmente necesita de todas formas” dijo el extraño.

“¡Cielos! Qué luchadora es ella”, repitió Lee.

“Esa es una buena forma de mirarlo” comentó Enrique, su cuñado, “¿No la noqueó Kina? Pasó tan rápido que no llegué a ver el resultado final”

“Un noqueo técnico es lo que llaman” dijo Lee, “ella estaba en la esquina, y hubiera sido la muerte si no detenían la pelea”.

“Era un truco” dijo el alcohólico, “La peruana agarró a Halana por sorpresa”.

“Kina la noqueó” dijo Lee.

“Ella se volvió para sonreírme, y así la peruana consiguió el golpe de gracia” remarcó el alcohólico.

“Pensé que dijiste que no habías ido a la pelea” dijo Lee.

“No, tú dijiste que no fuiste a la pelea; yo fui afuera sólo por la pelea”.

“Fue una pelea grandiosa” remarcó Enrique, luego le susurró a Lee, “Espero que este asqueroso se vaya”.

“¿Cómo puedes decir eso?” dijo el alcohólico a Lee y Enrique.

“Lo digo por que es cierto” dijo Enrique, “soy el único acá sentado a tu lado, déjanos en paz”.

“¿Qué dijo?” preguntó el alcohólico a Lee.

“El dice que tú eres un alcohólico y que él conoce a Kina y que ella va a venir acá después de la pelea a golpearte por molestar a su cuñado”.

“Es una mentira” dijo el alcohólico.

“Es verdad” dijo Enrique, “Es verdad lo que él dijo”.

“Es una mentira” dijo el alcohólico orgullosamente.

Y justo entonces, una mujer cerca al alcohólico se armó de valor y golpeó al alcohólico, él se cayó al piso y ella dijo: “y me da lo mismo que creas o no, soy la cuñada de Kina”, y el alcohólico sólo sonrió mientras que la miraba a ella, y dijo, “Puede ser posible”.

Know Your Kitchen Staff – Types of Chefs

Culinary careers are surprisingly complex and varied. If you ask anyone who has been through cooking school, they’ll tell you that this process required them to make big decisions about what they wanted to do with their careers. They had to decide which types of food they wanted to primarily work with, and they had to determine which specific skills they wanted to have to supplement their abilities. And in many cases, the most qualified chef in one type of cuisine is completely clueless in another type.

If you’ve had a lot of fine dining experiences, you may be wondering about all these chef terms that you’ve heard. Or if you’re looking forward to a high-class meal in your future, maybe you want to know about these terms to that you’ll know when the time comes. Whatever your reason, it’s very useful to know all these chef terms.

Here are the main ones. You’ll notice that the names are in French. That’s because this is how you’ll primarily hear them in cooking circles. If you’re not familiar with French pronunciation, be sure to pay close attention to how others pronounce these words.

Chef de cuisine: The chef de cuisine is the executive. He or she is the one who is in charge of everything. Most of the celebrity chefs that you’ve heard of are chefs de cuisine. They design the dishes, oversee staff, and make sure that everything is done properly.

Sous chef: The sous chef is basically the assistant manager of the kitchen-the chef de cuisine’s right-hand person. He or she often plays the more direct role in overseeing staff and giving orders.

Saucier: Sauciers are chefs who specialize in sauces, whether it be pasta sauces, seafood marinades, or anything else that fits into this category. While this may seem like a relatively unimportant job, sauciers would beg to differ. Sauces are what give food its flavor, and if it’s not done well, you jeopardize the whole meal.

Poissonier: This term comes from the French word poisson, meaning fish. Thus, you can probably guess what the poissonier’s speciality is. Yes, he or she focuses on fish, plus seafood in general.

Rotisseur: The rotisseur in a kitchen is in charge of roasted, broiled, and braised meats. They’re the ones who know how to make those steaks taste perfect. But they’re also experts on how to flavor meat. Ask a rotisseur about her philosophy on barbecue, and she’ll be able to talk your ear off for hours.

Entremetier: Enteremetiers focus on many types of side dishes, especially vegetables dishes, soups, and egg dishes.

Patissier: The patissier is the pastry chef, focusing primarily on pastries and desserts. In culinary schools, this is by far the most in-demand specialty, as everyone loves dessert.

Cook: If you peak into a kitchen, even at a fine dining restaurant, you’re likely to see some workers who have not been through the training required to become a chef. These are the cooks. Many chefs have at least one or two cooks working under them.

What are Specialty Chefs?

There are a number of specializations you can go into as a chef. There are no rules that say you have to be the executive or sous chef, chronically loaded down with an incredible amount of responsibility. If you are one of those creative cooks who’d rather be a little lower down the ladder but deal with a lot less stress, you can still keep your finger in the pie (so to speak) with one of the following culinary cooking specialties:

Saucier – As might be expected, the saucier is the sauce specialist. As a saucier, you create all the sauces and those dishes that are cooked in sauces. Making from scratch stocks, soups, classic and contemporary sauces, accompaniments, and foods paired with all these are all considered part of your job. Sauces are an essential component in much cooking, so sauciers must be very well educated when it comes to the possible mixtures and combinations of ingredients that compose a fine sauce.

Garde Manger – The garde manger creates all the cold food presentations: fruit and vegetable salads, pates, canapés, and hors d’ouevres – anything cold for the table. The garde manger chef makes all vinaigrettes and dressings in addition to molded aspics, pickled vegetables, chutneys, and relishes. In some settings, the garde manger chef plays sculptor, as well, by creating ice sculptures ranging from the simple to the elaborate to decorate party or buffet occasions.

Entremetier – The entremetier prepares, cooks, and presents all types of vegetables, pasta, rice, and egg dishes. As an entremetier your rice must never stick to the pot and your spaghetti must be cooked perfectly al dente. Vegetable side dishes perfectly prepared and impeccably presented to accompany entrées make you an important link in the “food chain” of culinary arts.

Patissier – As a patissier, you are the creator of all baked desserts and other confections: cakes, pies, tortes, tarts, cookies, and candies. Creativity must be expressed not only in the taste, but also in the decoration of all types of dessert and pastry dishes. The perfect piecrust is your forte, and fudge, for you, never fails.

These are a just a few of many other culinary positions out there in the world of food, but all professional cooking positions require the following traits:

- stamina

- excellent sense of smell and taste

- creativity

- math skill

- good with details

- patience

- good teamwork abilities

- organizational skills

So if you love to cook and possess all these characteristics, there awaits for you many excellent opportunities as a specialized chef. These positions don’t carry quite the prestige as does the head or executive chef, yet the final (and most critical) responsibilities of wherever you work do not lie at feet of these positions, either. But make no mistake: although specialty chefs may not be held ultimately responsible for any major faux pas, they are still expected to create and produce at the top of their expertise.
